Nutrition in Disguise Recipes

The Nutrition in Disguise (NiD) project focuses on creating nutrient-dense recipes by adding healthy ingredients to common foods that LTC residents already enjoy.
The NiD is a training program and recipe box that can be used by LTC menu planners and chefs. Findings from the NiD research shows that recipes can be made more nutritious through menu planning with key ingredients.
Recipes for Long-Term Care Homes
Download enhanced recipes for common meals in Ontario LTC homes (in Word format). Each recipe was vetted by a dietitian for nutrition and cost efficiency for LTC. These recipes were tested in smaller portions and then scaled up to 50 portions, thus the amount of some ingredients may be overestimated. Please make any adjustments necessary. We would appreciate any feedback or suggestions for improving scaled recipes. Nutrient information provided is based on Sysco’s nutrient analysis software.

Calling all chocolate lovers! This twist on the classic brownie is made with lentils and beans to add much-needed nutrients for residents

Mulligatawny Soup
This fragrant mulligatawny soup is spiced with curry and made with red lentils, beans, various vegetables and a plethora of herbs and spices.

Cranberry Almond Streusel
This cranberry almond streusel will be a hit with anyone who takes a bite. Made with almonds, cranberries, hemp hearts and chia seeds — this streusel satisfies nutrient needs and taste buds alike.

Oatmeal Cookie Berry Parfait
Where dessert meets health. This Oatmeal Cookie Berry Parfait is a beautifully layered combination of ingredients. Made with hemp heart seeds, oatmeal, creamy yogurt and fresh juicy berries.

Spinach and Cheese Quiche
This spinach and cheese quiche is the perfect blend of eggs, cream and vegetables. Made with fresh veggies, sharp cheddar, and eggs.

Beef Barley Soup
A rich comfort meal in a bowl. Loaded with beef and veggies and full of fibre. Made with hemp hearts, barley, flaxseed and flavourful spices.

Orange Carrot Muffin
Muffins packed with fresh carrots and orange zest that offer very little guilt and lots of flavours. Made with carrots, oranges, nutmeg and other delicious spices.

Baked Berry Oats
This fragrant mulligatawny soup is spiced with curry and made with red lentils, beans, various vegetables and a plethora of herbs and spices.

Banana Blueberry Loaf
This moist and flaky banana blueberry loaf will be an instant favourite. Made with bananas, eggs, carrots and lentils for a nutrient-dense dessert.

Beet Puree
The perfect tangy side dish to complement roast meats or other meals. It is made with pickled beets and prunes.

Bran Chocochip Cookie
A favourite among chocolate and cookie lovers. Made with raisins, chocolate chips, eggs, peanut butter and chickpea flour, providing residents with a nutritious and delicious dessert or snack.

Carrot Puree
A silky smooth puree that can accompany any meal. Made with carrots, lemon juice, dill, ginger and chickpeas, providing a nutritious side dish.

Chicken and Vegetable Lentil Soup
Residents can chase away the chilly evenings with this cozy bowl of soup. Made with lentils, chicken, different vegetables, and packed with spices, providing residents with a burst of flavourful nutrition.

Egg Salad
A simple yet delicious classic that will be a hit for residents. This staple is not only delicious but easy to make, and pureed for residents to easily consume. Made with eggs, mayonnaise and parsley.

Garlic Mashed Potato
This garlic mashed potato recipe is made with a few simple ingredients delivering a great flavour – made with potatoes, milk, garlic and kidney beans.

Hummus
A creamy smooth hummus that is packed with nutrients for residents. A perfect snack or side to accompany a meal. Made with chickpeas and different spices, providing a delicious kick of taste.

Lasagna
This cheesy lasagna recipe is filled with vegetables, providing residents with tons of flavour and nutrients. Made with various vegetables, kidney beans, pasta, cottage cheese and shredded mozzarella.

Lemon Loaf
Every bite of this moist lemon cake is bursting with flavour. Made with lemon juice, red lentils, creamy greek yogurt and eggs.

Orange Creamsicle
This delicious orange creamsicle jelly will have you hooked after one bite. It is the perfect dessert or snack for residents, made with soft tofu, gelatin and maple syrup.

Pureed French Toast
This pureed french toast is the perfect blend, mixing the sweet and comforting feeling of breakfast. Made with eggs, apple sauce, cinnamon, milk and bread.

Sausage and Lentil soup
A perfectly seasoned and rich-flavoured soup that provides a tasty spice blend to warm residents from the inside out. Made with ground pork, celery, onion, carrots, lentils, and many different spices and herbs.

Split Pea and Navy Bean Chili
This chili is a nutritious staple with tons of flavour. Made with chili spices, potatoes, white navy beans, zucchini, onion, celery, and green and red peppers.

Sweet Potato Oat Pound Cake
A wonderful and tasty breakfast treat that residents will love, using oats and sweet potatoes. Made with eggs, oatmeal muffin mix, sweet potatoes, almond slices and milk.

White Bean Blueberry Oatmeal
A healthy, vibrant and refreshing oatmeal mix that is packed with flavour, bound to be a favourite amongst residents. Made with white kidney beans, milk, oatmeal, cinnamon and blueberries.

Protein-Packed Spinach & Cheddar Yogurt Dippers with Lentil Chips
Creamy and savory with rich, tangy yogurt and crunchy lentil chips for a wholesome and satisfying bite. Made with lentils, yogurt and cheddar cheese.

Balsamic Glazed Power Loaf
A golden loaf with a sweet, tangy balsamic glaze and a tasty flavour. Made with lentils, onions and walnuts.

Tilapia & Butter Beans
A hearty meal, pairing tender, flaky fish with creamy, protein-rich beans for a simple and nourishing dish. Made with tilapia, lime beans and tomatoes.
Thickened Fluid Recipes
Residents and patients may experience taste fatigue with traditional thickeners used to thicken fluids. Our Thickened Fluid recipes provide an alternative thickening agent… pureed oatmeal! In addition to being a base for these thickened fluids, oats provide fibre and key nutrients. Some of the recipes are at an IDDSI 2 and others at an IDDSI 4 level. Mixed Berry Drink
A vibrant medley of different berries that is bursting with flavour and tanginess. Made with strawberry and blueberry jam, oats, and yogurt.
